All Points West Distillery was founded by Gil Spaier. An architect and building renovator by training, he took up baking as a hobby. Baking is a function of yeast. That led to milling his own grain. Handling yeast and milling his own grains led to home brewing. And home brewing led him to distillation, founding his passion project in 2017. He had the idea to use
